Visit the baking days at Microbakkerij Deesem on the outskirts of Tilburg.
In the middle of Moerenburg, in a green spot just outside the city, sits Microbakery DeesemThis bakery is not open weekly, but operates on fixed baking days: usually twice a month, on Sundays (between 11:00 and 14:00). And it is precisely that exclusivity that makes a visit to Deesem extra special.
No machines or full-scale production here, just: kneading, waiting, baking. Everything revolves around sourdough. That takes time, but it produces bread that actually tastes like something. Firm, full-bodied, and with a good crust.
On a baking day like that, by the way, it doesn't stop at bread alone. Sourdough collaborates with 'Forgotten Fruit' by Rosemarijn. An initiative that gives fruit that would otherwise sit around and eventually rot (what a waste!) a second life. And that, in turn, ends up in the baked goods of Sourdough. Match made in heaven.
You find Sourdough at Germans, in a spacious, over 200-year-old Flemish barn. A creative place where people can develop their ideas and get to work. No rigid frameworks, but space to build something and experiment. Right in the middle of Moerenburg, amidst the garden and everything that grows.

Returning to Allemans is not a bad idea, because there is plenty going on. From workshops to joining the Allemans table – a few times a month, depending on the season, with long tables, strangers and strangers, and good food. And anyone who wants to can roll up their sleeves during one of the volunteer days in the garden.
Actually just a lovely, honest place.
