The hotel's four rooms and two suites are named after Stéphanie's father Bruno's mineral collection. Each room bears the name, color, and silent energy of a stone: Tourmaline, Opal, Celestine, Amethyst. The four rooms on the first floor are spacious, averaging around 40 square meters, and each overlooks the surrounding mountains.

The two suites on the upper floor are intended for families or a group of friends, with a connecting door between them. The bathrooms are enormous, practically rooms in themselves, with freestanding bathtubs and seating areas. Understated luxury. Even the air conditioning – a detail, but one that counts – is concealed, unobtrusive, and virtually silent.

As mentioned, Millau is one of France's most famous outdoor destinations. The town has become a hotspot for paragliding: according to many, one of the best spots in Europe, thanks to the thermals rising from the Causses. And furthermore: canyoning through the nearby gorges, kayaking on the Tarn and the Dourbie, or simply settling down by the river for a refreshing dip. Climbers are also drawn to the limestone walls of the gorges. The highest peak in the region, Mont Aigoual, reaches 1.567 meters. On a clear day, the view from the summit extends to the Mediterranean Sea, the Pyrenees, and Mont Blanc.

Twenty minutes south of Millau lies Roquefort-sur-Soulzon, the only place on earth where authentic Roquefort is allowed to ripen. The village is situated on a slope where, about a million years ago, a landslide broke open the limestone massif and carved out natural cave systems known as the fleurines. Cool, humid air constantly circulates through them, keeping the temperature constant at around 10°C—precisely the microclimate that makes the ripening of the famous blue cheese possible. Tours of the caves can be booked in advance or arranged on-site, and they naturally conclude with a tasting. Tip: leave your sandals at home. The caves are damp and the ground can be slippery.
