Dennis Huwaë returns to the Jordaan with restaurant Daalder Atelier
We have written a few times here on Barts Boekje about our former neighbor, chef Dennis Huwaë. That's right, the handsome chef of the very nice restaurant Daalder. Yes, that was our good neighbor for a long time (yay!) and we have known for a long time that Dennis is absolutely crazy. But now even more people knew when the chef won the Gault & Millau award for Talented Chef 2018 and at the beginning of 2021 Dennis & co finally won that coveted Michelin star. And then we - again - applauded. Again and again. Dennis & co are unstoppable, you understand.
The latest news? After Dennis packed up his restaurant Daalder last year and moved to Amsterdam West, he is now finally back in the Jordaan. With Daalder, Dennis and his team pushed the boundaries of what a fine-dining restaurant can be Daalder Atelier the search for what is culinary possible is paramount. The old Daalder on the Lindengracht has been extensively renovated.

The owners of Daalder restaurant on Amsterdam's Lindengracht have an interesting history. In short, if you are confused: yes, first it was co-owner Frans van Dam (the one with his wife, among others Company de Taart runs) himself in the kitchen of his Daalder, also great, but soon the Breda Guillaume de Beer thought 'that he could do better'. Frans allowed it. Later his also buddy Freek (yes, yes, do) was also allowed to join. When the men (together with Jojanneke) went their own way, Dennis took the cooking helm of Daalder in 2015 - a golden move of course, taken from the kitchen of &Samhoud where Dennis also fished in a star (or was it two?). And so the former brown café in the Jordaan on the Lindengracht became a household name: dining at star level, averse to formal fuss or stiff service. And then (2021) Daalder continued in Het Sieraad. And now (October 2022) the Amsterdam chef returns with his restaurant to the Jordanese café where it all started.
Lindengracht 90 is now a chef's studio. The place where Dennis Huwaë and his team create, but where they also let everyone look over their shoulders. When Huwaë took over Daalder in 2015, there was room for 64 guests. There are 36 in the studio. Fewer guests, but really personal.
If it were up to Dennis, fine dining would be colorful and unique. And YesWe agree.
