Before you continue, please read this: Pure C Cadzand Bath.

Yes? Are we there again? Nice. Then you understand that we Cadzand, Badzand-Bad to be precise, now called Sergio-Herman-zand since the chef opened two more pearls in the small seaside resort. Indeed. Two. And the best news is that both pieces are (much!) more accessible than Pure C and that they are both in a super sleek pavilion with a view of the sea and the marina. Handsome.

Number one is AIRrepublic in the marina of Cadzand, and number two AIRcafe. First AIRrepublic: An accessible brasserie from Sergio Herman where 'simple preparations of fish and shellfish are served with a focus on classic cuisine and Sergio's roots'. Nothing but Zeeland products, of course, and most of the menu was once on Sergio's father's menu. Of those never out of style dishes, passed down from father to son. Nice. For example, the fish soup, which used to be served at Oud Sluis restaurant (nom!), marinated mussels, oysters with champagne sauce and fresh langoustines. In the kitchen is Nicolas Misera, a chef who used to work behind the pans at the French Chez Bru (have you seen him again? our beloved Pure C.).

And then there's also that AIRcafe, the self-service and take-away section of AIRrepublic. Freshly prepared snacks such as shrimp croquettes, a pistolet with gray shrimps and a glass of cava, vegetarian tortilla, sourdough crocques, oysters, charcuterie and a good croque monsieur with cheese from the Vos family from Biervliet. We forgot to mention the terrace: lovely. Everything.
