All to Bruges: LESS by Hertog Jan***

When chef Gert De Mangeleer and sommelier Joachim Boudens closed the doors of their three-star restaurant Hertog Jan at the end of 2018, it was not the end, but a new beginning. A few months later they opened their first new business: a new version of theirs sharing restaurant LESS The restaurant moved from the Torhoutse Steenweg in St. Michiels (where Bar Bulot would later be located), to a building on 't Zand, a square in the heart of Bruges.
LESS stands for 'Love. Eat. Share. Smile.' and is a pleasant one eatery with international appeal. You can go there for large and small culinary delights cravings who will delight you with all kinds of dishes to share. The kitchen team at LESS is led by chef Ruige Vermeire and conjures up the most delicious dishes, inspired by flavors from all over the world. From a Marrakech burger and ceviche from Peru to dim sum from Hong Kong. Do we need to say more?! And the extensive selection of wines and beers also got a worldly edge. At LESS there are no well-trodden paths, but new discoveries from all over the world. We can only applaud that.
The interior of the new LESS by Hertog Jan*** was designed by the Belgian design agency Another Office. A mix of sturdy elements and warm materials provides a fascinating contrast and international-looking result, with aged wooden tables, textured walls, a nubuck leather sofa and refined textiles by textile designer Nathalie Van der Massen. Eye-catchers are the oxblood-colored cement floor and the low seating kitchen counter with room for as many as seventeen people. Although the terrace and veranda do not go unnoticed. There, a massive wooden construction in a dark-stained paddock and special glass ensures the ideal temperature, rain or shine.
Also nice? The worldly cuisine and warm interior of LESS are provided with the right beats by the eclectic playlists of Belgian DJ and producer Buscemi. And would you like to have dinner a little earlier because you still have plans afterwards (the Bruges concert hall is nearby)? Then you can order a tasty and quick 'pre-theatre menu' between 18:00 PM and 18:45 PM. Just as convenient!
