Sustainable sourdough bakery Fort Negen in Amsterdam

When we talk about a real Real Baker, we are talking about Fort Nine. This new bakery In Amsterdam west van Maarten Langeslag is pure craftsmanship. And yes, we already know that. The good man wants to show with this organic and sustainable baker that things can be done differently. Because why not go back to a bakery like you used to have? A bakery where you can get the warm bread in your hands and you can't really keep your hands off it on the way home? Correct. One of those. We want that again. Oh, and Maarten, can we pay by direct debit again, just like before?

 

 

Was it the smell that lured us in from far away at Fort Nine? The smell, which slightly tickles your nose upon entering, everything is so freshly baked under your nose. Deep in Amsterdam West, this turquoise colored bakery took up residence on Jan Evertsenstraat. Here, the hot rolls are now flying over the counter and in the morning there are queues out the door, hoping to score a sourdough roll - crispy on the outside, but warm and soft on the inside.

The bakery previously only delivered to restaurants and catering establishments (look, that's why we know it's good) but due to corona (what's new) another solution had to be found for Fort Nine – and quickly – in order to still be able to sell their delicious bread. That worked: the focus is now on private individuals. They actually wanted to do that for a while, so hey, it's a win! Fort Nine is a bit rebellious and handles things completely in its own way. The tasty transparent case bakes the loaves right in front of you. You can see the floured workbenches (including the floured bakers), whirring machines and rising loaves in the oven. This has been thought about, the folks at Fort Negen thought they would teach the people something by showing how the bakery trade works. While you wait for your sandwich, you can witness part of this process. Real bakers, like those at Fort Negen, love it the original craft. Or baking, but from grain to the end product: the desired one crispy outsidesoft inside, after all, does not just happen. Love has been molded into it and passion has been mixed in it.

Great craft, that baker's profession – especially when we as consumers always expect better things. Hereby the best bakers in Amsterdam.

Fort Nine gives baking bread a different look. Sourdough bread is proofed here for 26 hours (yes, you read that correctly, that's long!) for extra lightness, flavor development and good digestibility. Plus: at the not-yet-opened bakery they bake all those breads, cakes and croissants right before your eyes. Super fresh everything to take home. It couldn't be tastier.

We love how creative Fort Negen is in realizing this beautiful sustainable bakery. Does it come: via a crowdlending campaign can they in it autumn open the doors. People can lend money to the bakery so that they can purchase all their materials and tools. And what do people get in return? Refunded interest and gifts directly from the bakery. Think of free bread or a workshop. A bakery for and by the community. We already love it!
