Champagne bar Hennequin & To Amsterdam

Hennequin & To at the Ferdinand Bol in Amsterdam... You might have already read that it is a champagne bar Re. And champagne bar = you have to go. At least we do. At a tight trot. And guess what: the Hennequin & To bubbles are delicious.

It went something like this: we started with a drink at the Hennequin bar, of course. Own champagne soup? Yes. That deserves some extra attention, in short: the owners Pascal Hennequin and Tobias Mensink were celebrating one of their many wine trips in the champagne region when they suddenly came across the Hennequin family's champagne vineyard. It turned out that they were very much family and so a bottle of the bubbles came home. The rest is - with a big leap - history (be sure to read that history here but back in a moment). So we sat and had a nice drink at the bar, after which we quickly moved on to dining. Because be aware. You don't 'just' eat at Hennequin & To. Okay, that's possible, but you're selling yourself short because the two know their stuff, and not just when it comes to the aforementioned oh-so-delicious champagne.

On the menu (when we joined) of the better, hard core meat preparations (wild duck and deer steak) to frog legs with delicious polenta and salsa verde. What else? A remarkably good steak tartare with a perfect 63 degree egg that our dining partner couldn't stop talking about. And a delicious dish with sweetbreads, if you're crazy about that. The menu, and we like it, is anything but standard (hence the frog legs), everything with the French stroke.
