Lynn's Pad Thai recipe takes you to Thailand

Who says Thai food, says... Pad Thai. A typical dish that makes you feel like you're in Asia for a moment. Sitting on a small stool on the street with the sound of TukTuks in the background - just absorb that feeling. Yes? Are you there? 2 garlic cloves, crushed

1 shallot, finely chopped

150 grams of chicken thigh, 2 by 2 cm

2 eggs, beaten

100 grams of rice noodles

75 grams peanuts, roasted

2 tbsp tamarind paste

3 tbsp sugar

2 tbsp fish sauce

2 tbsp oyster sauce

1 tbsp mirin

cube of ginger 2 by 2 cm, grated

1 lime, zest

75 grams of bean sprouts

1 red chili pepper, sliced ​​into rings

Spring onions, to taste

Coriander, to taste

Oil for frying

Instructions:

Instructions:

  • Fry the shallot with the garlic in a little oil. Add the chicken thigh and fry for 5 minutes.
  • Move everything to one side of the pan, pour the egg on the other side of the pan and make it here scrambled eggs by. Then mix the egg with the rest of the ingredients from the pan.
  • Crush the roasted peanuts with salt and lime zest in a mortar.
  • Soak the rice noodles in a bowl of warm water.
  • Make a sauce from tamarind paste, sugar, fish sauce, oyster sauce, mirin, juice of half a lime and ginger.
  • Pour the sauce into the pan and add the noodles, bean sprouts, red chili pepper and peanuts.
  • Serve the Pad Thai with coriander, spring onion, red chili pepper, lime wedges and peanuts.
