Brabant nights are long and Lynn's sausage rolls are the tastiest
Worstenbrood... We Brabanders have an opinion about that. What then? Well, that non-Brabanters really don't know anything about it and that we have never - no, never - had a really good sausage roll above the rivers. Never. So our Lynn got to work herself and behold: this is what we call sausage bread in Brabant. Which Randstad baker dares to do it?

Bread
500 grams of flour / 300 ml water, lukewarm / 7 grams instant yeast / 10 grams of sugar / 10 grams of table salt / 50 grams of butter, melted / 1 egg, for greasing
Meat
800 grams of sausages / 1 egg / 50 grams panko / 2 tbsp Dijon mustard / 2 tbsp curry / 1 beef stock cube / pinch of sea salt, to taste
Optional: 1 tbsp toasted, finely ground fennel seeds
– Mix the yeast through the water and add it to the flour. Knead it well and add salt, sugar and butter. Knead the dough for 10 minutes.
– Cover the dough with a tea towel and place it in a warm place, let the dough rest for 30 minutes.
– Remove the sausages from their skins and mix in egg, panko, mustard, curry, the stock cube and salt. Roll/knead sausages of 45 grams.
– Also divide the dough into portions of 45 grams. First make balls of the dough and then roll out the dough into oblong slices with a rolling pin.
– Place a sausage on the dough and wrap it well. Press the dough closed and roll the sausage roll so that the dough fits nicely around the sausage. Press the sides down while rolling, so that the excess dough falls off.
– Brush the sausage rolls with egg and let them rest for 10 minutes. Bake the sausage rolls for 10 minutes in a preheated oven at 220 degrees.
