New to Ibiza can be – let's be honest – sometimes a bit 'too'. Too hip, too busy, too much to see and be seen... But the newly opened Pomelo Beach, now the summer hit of 2025 is really nice!

Pomelo Beach is exactly as it looks in the picture: a fresh & tasteful interior and hip types who are sitting comfortably win & dine. Not super fancy, but very chill. With your feet in the sand, including sunset. The food is tasty, not cheap (but what else is new.,.). On the beach – in comes the playa – is the vibe chill, with a mixed crowd and affordable sunbeds (two sunbeds including parasol for €21 is a steal by Ibiza standards).

The nicest new B&B, near Santa Gertrudis: The Guardian House Ibiza. Run by an inspiring Dutch couple and a picture-perfect accommodation that – ha! – is not unaffordable and yet in the nicest spot on the island (Santa Gertrudis is located in the middle of Ibiza and is by far our favorite base). When you book, pay attention: there are two large rooms with a private bathroom, the rest of the rooms have a shared bathroom! That makes a significant difference in the price, so you know why. Everything is clean and also oh so nice. You can also eat eco-breakfasts from the nearby Together Farm (from the nicest & most creative entrepreneurs on the island who also Restaurant Juntos House in San Mateo (go!) & run the shop Parada in Santa Gertrudis).

And if you are in Santa Gertrudis: do not skip it under any circumstances Can can fabrics for Italian wines and the fine food bar. En At Bibi's, the best bakery on the island.

The new restaurant CÃRNESA, a Brazilian (meat) party on the Spanish island in the place where Es Caliu used to be, promises authentic barbecue in a centuries-old Ibiza finca, and they largely succeed. The picanha is almost perfect – tender, juicy, cooked correctly. The atmosphere is also right: jungle lighting and Brazilian beats without falling into kitsch. 10 points.

But then the price. €65 for the all-you-can-eat rodizio is very spicy, even for Ibiza standards. The side dishes are basic and the salad bar is okay. The famous caipirinhas? Nice, but well… €16 each. And that hurts a bit since we never stop at just one.

The service varies per evening – sometimes fast and competent, sometimes it seems like the passadores are on their first day. Reservations are required (there are two shifts on Saturdays), otherwise you will be left empty-handed. Yes, go, because it is delicious, and the next day sandwiches with peanut butter…

Opened in July 2025 Soho Farmhouse Ibiza (in the former Cas Gasi, sob) finally opened its doors: the hit from the English countryside under the Spanish phrase – of course this was already a hit before they even opened.

Maison Sense is the new one of Sant Rafael, an Asian restaurant and quite different from everything else on the island. A nice courtyard, with lots of knickknacks and cats walking around… Anyways, to be continued.

By happy coincidence, we joined by chance at the end of summer '23 hostal Mar y Sal, aat the end of the beach called Ses Salines (or at the beginning, depending on how you look at it), on the other side of the dunes (so not on the beach itself), hidden behind a large parking lot (opposite a small supermarket ), and we were thrilled with this 'discovery' to say the least. The hotel has been around for some time, but was given a nice upgrade and became a fantastic, fun and affordable boutique hotel: Hostal Mar y Sal. Adults only well, which is a shame for people with kids, because it's hard enough to find a cool hotel in Ibiza that won't break the bank. Don't worry: it's also highly recommended for lunch (or just an ice cream) with kids. Moreover, when you cross the dunes, you walk on a slightly quieter part of Ses Salines.

A beautiful, brand new place in Ibiza for a cup of coffee, an extensive breakfast, some shopping, some work outside the home and a game of yoga. Maison Savannah Ibiza is the name, and on the outskirts of Ibiza town you will find the more than relaxed and also wildly attractive address (simple and ingenious - we like) address.

The most exciting opening of 2024 in Ibiza? That must be the promising Roca House. Admittedly, at the time of writing we have not yet been there ourselves, but the promise of a restaurant with a swimming pool (usually reserved for hotel guests, but here there are none, hotel guests, because it is not a hotel). The people behind the opening try to be a 'community' - we always find it difficult to find what they mean by that, because hey, we are on holiday and looking for good food, drinks and entertainment. Now it seems that this is also just a mustache. Plus, we've rarely seen a more tasteful (not saying much), more intriguing Instagram.

Not far from Racó Verd (see us ebook: a good – time-honored – budget tip), also in Sant Josep, and also very well hidden, is the fantastic Hotel Jardines de Palerm and restaurant Casa Linda. Casa Linda had us at hello, just because of her title: did you know that it is an old Spanish custom to call a beautiful girl Chicka Linda to mention? A romantic place, opulent albeit the hotel and restaurant, where you can sit under the purple flowers and also as a non-hotel guest. Chef Thomas Abellan stirs the pans and serves Mediterranean dishes in a fairytale setting of small tables under local plants, illuminated by cozy lanterns.

Madunia, snake for Mama Dunia what Mother Earth knows means, will open its exterior doors for the first time in June 2024. And yes, already in this book because 1) new = exciting, and 2) the first images promise a lot of good! Nothing here but island products: fresh seafood, Iberian ham, prawn roja carpaccio and more. And the location is also great: right, but really right next to the already beloved place Hostal La Torre, you will find the terrace at the rear of the building, the place where you want to be at Madunia is on the hills of Cap Negret. To be honest, we ourselves get a bit of the creeps from a hotel as conceptual as the new one. adults only hotel Los Felices on the west coast of Ibiza. All pink, all Palm Springs, but then 'made'. There are fashion magazines and books everywhere, iconic interior pieces stand, lie and hang and the rooms are named after designers. It swimming pool – of course the showpiece of the hotel – seems to have been copied straight from a 60s Vogue (and that probably is the case). Picture perfect? Si. But a little too much for our taste. But hey! Correct us if we are wrong! Above all, we stand to withdraw our prejudice.
