Fleur van Olphen proves that hospitality professionals can't sit still. She graduated from hotel school less than a year ago, but she's opening her own business in Amsterdam's Pijp neighborhood at the end of 2025. Bar NeighborA second living room for the neighborhood with fair prices and delicious food. Sounds good. At Bar Buuf, you're welcome to drop by all day long. Because, as they say, "A good neighbor is better than a distant friend." Early risers enjoy their first coffee of the day there, and later you can join them for local snacks and then linger at the bar.
Fleur missed that simple basket of bread and carafe of water like in Paris, that obvious welcome. So she decided: we'll do it ourselves, locally. Fleur has a French-Vietnamese background, and the Italian family recipes are from the sous chef. The menu changes cheerfully with the seasons.
