On the other side of the world we only really deal with the stress of choice. Because where oh where are we going to eat, drink, wine or have a coffee after surfing? Something in the context of: you can only worry about something. Personal favorite in all of Byron Bay is Bar Heather. A wine bar just outside the center with not only good wines, but also a very good menu. Wine first at Bar Heather in Byron Bay (but be sure to grab that tasting menu too!).

You search and you will find: Bar Heather. Just outside the center of Byron Bay, but therefore more fun. Like you're really going out for the evening. And if you are going out that evening in the part of Johnson Lane (that's where you will find Bar Heather), then you would do well to come on Thursday evening during the live jazz music. Take it when you're inside asap a look at the wine list, because wine first is the bar's motto. But then natural wine from Australia. A very long list, but the sommelier is happy to help you through it.

The bar has a decor that we enjoy, completely in Parisian style. What is also great is the lovely people in the ministry. Not only does the sommelier know exactly what we need (a bit of background knowledge about the Australian wines in our case), but the service also knows how to put the dishes on the table with a touch of humor. The tasting menu is yours go-to. They kicked off with a crispy potato served with Manchego cream and mushrooms, followed by a bowl of pippies in buttery, pearly chicken stock. Pippies? Yep, Australian shellfish that you see everywhere on the beach and on your plate here.

The meat dishes are also top notch. Chef Ollie Wong-Hee, with his Chinese origins and interest in Southeast Asian cuisine, conjures up grilled pork wrapped in a betel leaf with lettuce and pickles topped with a pineapple-chili sauce. One of the best dishes. Everything is easiest to eat with one hand. If we like, that glass of wine can be placed in the other hand.

The icing on the cake is 100 percent definitely the dessert. Is there a restaurant in the Netherlands that please want to put this burnt honey and cardamom coconut ice cream sandwich on the menu?
