Baut, Amsterdam (East)

Baut's temporary right to exist guarantees this unclean a lot of hipness and reminiscent of Hanneke's Boom - because also temporary and obviously not made of valuable material - meets Rust - because also large and raw with living room sauce meets open kitchen. The restaurant is right next to Dancing Favorite Trouw and opposite the Volkskrant building where you Canvas on the 7th find. Not in the heart of the city, but thanks to the catering industry mentioned, it is no longer an unloved neighborhood. The hipsters are also indispensable at Baut, although we also spotted two stray beer bellies (hooray!). But where friendly, enthusiastic staff can turn a mess into a party, a petulant, self-righteous helper can ruin the most brilliant setting. Which became better on a second and third visit and we will only go back a few times because of the spacious terrace in front of the door, the top floor where private parties are held, BovenBaut, and the roof terrace, OpBaut. Baut
