That said: Les Hauts de Sancerre In the Sancerre region, also in France, lies a new unmissable gem. Yes, a stay costs a pretty penny, but you don't have to leave the premises: the new (2025) light and fresh country hotel (and by 'countryside' I mean the beautiful rolling Sancerre region) truly has everything you could want from a fancy hotel stay. That room, a fantastic restaurant, a spa of course, and a superb restaurant. And wines, naturally, until you’re completely wasted. Two nights here and you’ll be recharged.
Hotel Les Hauts de Sancerre opened on July 1, 2025, on the grounds of the former Château de Sancerre, a 19th-century castle overlooking the eponymous medieval town in the Loire Valley. The estate covers 4,5 hectares and is often described as a 'village within a village': there are a total of four stately buildings, including the château itself and the Tour des Fiefs, a striking medieval tower that is emblematic of the vineyard region.
The hotel is therefore relatively new and is still very much under development. For now, eight suites are available: the plan is for all renovations to be completed in 2027, at which point there will be a total of 27 rooms and suites spread across the four buildings.
Just a quick word on those light and fresh rooms: the interior design stands in deliberate contrast to the historic exterior. Nothing but neutral colors, minimalist design, and contemporary furniture. And plenty of daylight, too.
But of course, it is mainly about the culinary part of the hotel: restaurant La Table d'Arnaud. Chef Arnaud Munster, originally from Belgium and a finalist on the French television program Top Chef, works with seasonal, local products and combines this with a contemporary approach. AND with – naturally – the surrounding terroir complemented by a selection of Sancerre wines. The restaurant seats 16 and is open for dinner from Wednesday to Sunday, and for lunch on weekends.

Is there a spa in the small village? What else! And what a spa it is. The spa at Les Hauts de Sancerre uses exclusively cosmetic products inspired by the nearby oak forests – a choice that further underscores the hotel's local character. In addition, the hotel organizes wine tastings, visits to a traditional cooperage and bicycle tours through the surrounding vineyards.
The Tour des Fiefs, the last remaining tower of the medieval Château de Sancerre, built at the end of the 14th century and 40 meters high, is accessible to hotel guests from 6:00 PM until sunset. From Paris, the hotel can be reached by car in approximately two hours, or by train from Gare de Bercy to Tracy-Sancerre, followed by a short taxi ride.
