Nomadâs: on a culinary world tour in Tilburg

From Ecuador to Lanzarote, via Peru to Tilburg. Not the most obvious route to a restaurant, but it is the story of Chef Javier, the face behind Nomadâs Gastrobar. You will find the establishment on Academielaan, in a characteristic former house just outside the city center. Thanks to the abundance of wood, the stained-glass windows, and the various rooms, Nomadâs looks more like a beautifully furnished house than a restaurant; one we would love to move into immediately.

Luckily for us, you can also simply reserve a table.

As the title suggests, Chef Javier's world travels are reflected on the menu. At Nomadâs, Criolla, Mediterranean, and Nikkei cuisine come together.

For those who don't sprinkle culinary terms around every day: think of South American flavors, Japanese influences, and Mediterranean ingredients.

Not a forced fusion concept just because it's hip, but dishes that stem from places where Javier actually lived, worked, and drew inspiration.

The best way to discover Nomadâs? Choose the surprise menu. With every course, you receive a card explaining the dish, its origins, and the traditions behind it. This makes dining here truly feel like a mini culinary journey.

The menu has been deliberately kept small so that every dish receives the attention it deserves. In this case, less really is more. Even the plates have been chosen with care. The striking shapes make every dish even more beautiful to look at.

Even better: Nomadâs is not only a great choice for a night out for two. Thanks to the various spaces, the characterful building is also perfectly suited for larger parties, private dining, birthdays, or other special occasions. The homey feeling remains, even when you dine with a larger group.

Also fun! On Sundays, paella takes center stage. Large pans of steaming paella to share, a good glass of wine to go with it, and you’ll feel like you’re somewhere on the Spanish coast. As far as we’re concerned, the perfect way to end your weekend.
