At Omakase Amsterdam It's all about simplicity and craftsmanship. In the bright, minimalist restaurant on Ferdinand Bolstraat, formerly home to Moak, you take a seat at the wooden bar, directly across from the chef. There, the carefully prepared nigiri is served in a fixed order. No avocado, no mayo, no extras. Just fish, rice, and soy sauce. The concept is classic Japanese: you surrender yourself completely to the chef's skill, as he serves a 14-course menu featuring the freshest ingredients of the day. A small disclaimer: please leave your dietary requirements at home. Only gluten intolerance can be accommodated (to a limited extent), and latecomers will unfortunately not be admitted.
