Formerly Bluespoon, now renamed to Prins en Aap. This pearl in the Andaz Hotel is the place to eat, drink and admire the impressive interior, which you will certainly not forget quickly. Because upon entering, your eyes are already wide open. We are too every time, we don't show it of course, but it is. The cocktail menu? A star in itself, composed by award-winning bartender Nikos Bakoulis. Say goodbye to standard cocktails, here you drink art in a glass. Cheers, anyone?

The interior of Prins & Aap is a party in itself: an eclectic mix with a nod to Dutch history. The jenever table, inspired by old-fashioned pub tables, is a real eyecatcher, just like the other unique design pieces that complete the whole. Look, look, and then order cocktails. Oh, and those AI artworks? A nod to the Golden Age, but with a modern twist. Old meets new, just like that. Also don't forget the love seats at the bar, date night it is.

After the interior has stolen your attention, it's time for the main dish: the cocktail menu. Created by award-winning bartender Nikos Bakoulis and completely dedicated to biodiversity. Biodiversity in cocktails? Yes, you heard it right! The menu, aptly named Bio DiverCity, uses ingredients from Dutch soil. Think: carrot, beetroot, fennel… hold-up, don't click away! Because with a touch of this and a pinch of that, Nikos creates a taste explosion that is out of this world. High five for local products and cocktails with a story. Cheers!

This is where Prince comes in: treat yourself like a real royal immediately all-day brunch, lunch, drinks or dinner. comfort food from local partners, with a menu that calls for sharing (but hey, no one's stopping you if you want to keep it all for yourself). Starters? Think of Zeeland oysters, lamb samosas, tempura tiger prawns and thick fries from Zuyd. Sharing is caring, but we understand if this makes you selfish.

To watch the hands the party continues: soft crab in coconut curry with green mango, lemongrass and jasmine rice or grilled octopus with tamarind, chili, bell pepper, banana and peanuts. A painting on your plate that is at least as artistic as the interior. Pour a cocktail and voilà: your evening is complete.

We have been there before Andaz bivouacked. Nothing wrong with that at all. It remains a fantastic place to sip a cocktail. Look outside a bit. You know how it is. And then roll through to the restaurant area where you can royal dinner is served. Full belly? No problem! You can also stay the night here—perfect for a weekend in Amsterdam or if you are simply 'too full' to go home. Andaz will be happy to welcome you for a luxurious sleepover, amidst all the art and the enjoyment of cocktails and a yummy menu.
