Tour of the Netherlands, here we go... At least, there go your taste buds. 2022 means a new concept for Brasserie Carstens: refreshing, honest and relaxed. At Carstens opposite Amsterdam Central Station you can immerse yourself in honest flavors. And anyone who still thinks that the Netherlands consists of only Amsterdam will learn better during this trip through their own country. An interactive experience (no fuss, just a nice look into the kitchen and a chef at your table) with fresh products and innovative creations.

The idea for a new concept started with chef Jeroen Bruinsma. His passion for surprising cookbooks and sustainability gave rise to the idea for a refreshing, honest and casual concept. “The Netherlands has countless beautiful products and I believe that nature does most of the work for us,” says Jeroen. Jeroen selects seasonal products and then only applies the right balance of techniques, temperatures and spices and voilà, a sustainable chef's vision is created, seasonal products and home-grown ingredients.

What's on the menu, you wonder? It is difficult to make suggestions for what you should not miss, because new dishes are regularly added to the menu. If you come across the Chermoula mackerel with buckwheat, lovage and pointed cabbage go, go go. The same applies to the lamb rendag with satay jantung, atjar and beans.

What is certain is the menu price. There are two options: a 3-course menu for 33 euros or a 4-course menu for 47 euros. The option to book a wine arrangement is also a given (we say do it).

And the location, we also have to talk about that. Location is key. You will find Carstens Amsterdam at the Park Plaza Victoria hotel. You know, that iconic hotel on the corner (opposite the Central Station). Carstens can be described as an urban brasserie with a modern twist (perhaps a little too modern). But the atmosphere is good, the service friendly and the food delicious.

A little more about that sustainable concept. Carstens works with suppliers who have a sustainable view of ingredients to reduce food waste. Pure nature.
