Off to Vliebiza. And then you know: an evening at Zuiver is part of it. We say evening on purpose, because you are not just sitting here. You are sitting here well. Long. Elvis Mešić – chef and owner – is in the kitchen and cooks with attention. His Bosnian roots, combined with the best of Vlieland, ensure a five-course menu that surprises. At the front, hostess Nely and host Djurre ensure that everything runs smoothly down to the last detail. Who all-in goes, order the oysters from Normandy with it. And if you dare, finish with a hearty cheese platter. Zuiver is a must for anyone who wants to start the weekend on Vlieland well. Or end it. Or both.

The atmosphere? Intimate, warm and with a touch of chic. Think: living room feeling, but with plates, glasses and cutlery that you don't have at home. There is a piano in the middle of the restaurant, not just for decoration, here you sit down for a dinner with live piano music. There are regular concerts, for example with Valentine's Day or Easter. Keep the social in the eye. Are you going to the island for a weekend at Pentecost? You want to make a reservation here. Really.

 

Once inside, all you have to do is sit back, lean back and let Djurre, Nely and the kitchen brigade spoil you. No rush. You are on Vliebiza. Time slows down by itself. Around you, you see bronze sculptures by Peter Peetersen, art that effortlessly blends with the natural atmosphere of the island.

Passion for food? Definitely. And then those wines… perfectly chosen, in perfect balance with what is on the table. Djurre and Nely know every bottle and are happy to share their knowledge. Here it is all about attention. For the plate, for the glass, for the evening.

Expect a five-course dinner for €72,50 per person. Not for nothing awarded 13 points in Gault&Millau. No fuss, just good. Exactly as it should be on Vlieland.
