New in Amsterdam: Scarpetta, a neighborhood pasta bar inspired by traditional Italian trattorias. They serve fresh, ready-made pasta in a glass jar for quick pickup or delivery. The idea comes from the Italian ritual "make the slipper', where you use a piece of bread to remove the last of the sauce from your plate, a sign of deep appreciation for the food.
According to the owners of Scarpetta, your pasta stays warm longer in a glass jar, preserves its flavor better, and is, of course, more sustainable. And anyone who returns the jar after their meal receives a reward.
