Lighthouse Island, Amsterdam
'Summer restaurant' used to be read when you Googled the Lighthouse Island off the 'coast' of Amsterdam. That is outdated: in the winter of 2016, a candle-lit bunker was created to emulate the success of the summer months. Success? Yes: Vuurtoreneiland started in 2013 as a pop-up restaurant on an island in the Markermeer near Durgerdam with only a dilapidated fort and Amsterdam's only lighthouse.
There was a greenhouse and a Spartan outdoor kitchen, that was it, and it was soon no longer possible to reserve a table. Guests paid a fixed price for the menu, which included many forgotten vegetables and the crossing. Party. and it remains that way, fortunately, but now also in winter.
