Great and good news for Amsterdam food lovers arrived in March: Yotam Ottolenghi is (finally) coming to the Netherlands. His first restaurant here opens in the heart of Amsterdam, in the Mandarin Oriental Conservatorium, better known as the former Conservatorium Hotel in the Museum Quarter, which now sails entirely under the Mandarin Oriental flag.

It is Ottolenghi's second restaurant on the European mainland—the first opened at the Mandarin Oriental Geneva—and in a way, Amsterdam feels like a small homecoming: he already lived here in the 90s. Expect exactly what Ottolenghi is so beloved for: vegetables in the starring role, pronounced flavors, and tables full of dishes to share, from breakfast to dinner.

And the meal was delicious. Burrata with rhubarb, blood orange, and crispy coriander seeds appeared on the table, accompanied by roasted aubergine, golden-raisin caponata and croutons, and charred leek with yuzu cream, sorrel, and smoked almonds. Naturally, this was accompanied by enough pita and tahini to wipe every plate clean. This was followed by grilled chicken skewers in a coffee.rub ? crunchy Potatoes with lemon butter. Just by the names of the dishes, you can tell: here you are dining at Ottolenghi's. Accompanying this with a crisp, cold Riesling from the man himself. Dining is a good idea, but the restaurant is also perfectly suited for a long, wet lunch.
