Chez Chloé is a new French high-end bistro on the Overtoom, Amsterdam

Endless cycling along the Overtoom, headwind, traffic lights, another tram (if you know, you know), but for this new restaurant, you’ll step it up a notch without complaint. After all, Chez Chloé opens in early April. French, a touch chic, but relaxed. With 'Il faut vivre d'amour et de vin' as its credo, you’ll soon find yourself enjoying a good glass here in Paris—uh, Amsterdam. A new high-end bistro on the Overtoom that you’ll visit and stick around with.

What an entrance. Un-Dutch and with lots of ParisFrench Art Deco meets boutique hotel chic with round shapes, symmetry, shell-like lamps, white linen, small table lamps, and velvety, rounded sofas. The staff is remarkably friendly (un-French, sorry not sorry). Be sure to ask the chef about his favorite dessert. He’ll love that!

At the helm of the kitchen is Chef Marcelo Hernandez (born and raised in Amsterdam's Stadionbuurt, classically trained in French cuisine). The menu features connoisseurs, but with a twist. Take, for example, the confit halibut with yuzu kosho sabayon or the bavette tartare with a porcini mushroom and seaweed sauce. It takes some getting used to that the tartare doesn't taste like your classic steak tartare, but sometimes you have to try something new. And the stuffed morels with mushroom parfait are delectable. In the kitchen, Marcelo is supported by sous chefs Boris Sanders (Entrepot, Bolenius*) and Nathanael Lawton (MOS*, the now-closed Foer). Not exactly a slouch.

Maître Rutger Bogers keeps things running smoothly; he certainly has an eye for detail. But anyway, let's move quickly on to the wine list. It is incredible. More than 250 French bottles, curated by sommelier Tim Palacios (CUE*, among others). From Domaine François Raveneau to natural wines from a new generation of producers. Everything is presented in a gold-colored climate-controlled cabinet in the middle of the restaurant. Iconic.

For those who really want to splurge, there is the Chloé Cave Privé booklet featuring rare bottles from the hotel's own cellar. And by that, we really mean opening the booklet and getting lost. The restaurant seats 54, but if you make a reservation, you can seat yourself at the chef's table. By far the best spot in the house.
